Unfortunately, your suggestions are not bringing any good. However, I want to mention I've most probably found the reason of the issue. It is not linked to the Mac sleep but the screen sleep mode. In "power saving" under system preferences (sorry if any translation is not perfect, my system is in french), the display power saving was set very low, even in plugged mode. I've not tried it in battery mode since I use my external display only when powered, but bringing the two values to the same duration prevents the screen to go to sleep mode while the Mac stays awake. Issues has not shown up since then.
That should be investigates as I guess it's not the expected behaviour and could probably be fixed.

You will have to do your own sleuthing: get in touch with UPS and ask for delivery confirmation (exact time/date and where it was delivered). If you were not home at that time, you may want to consider it stolen either by a stranger or during the UPS shipment process. Then write a snail mail to Apple corporate with detailed information. And, start a dispute with your credit card company.

I figured it out - I confirmed through settings that my son’s Apple ID was logged in; however, what I did not realize is that iMessage and FaceTime (in settings) may be logged into another ID.
In this case iMessage was still logged in under my son’s ID, but FaceTime was logged in under mine. Which explains why my text messages weren’t routed to the ipad, but my FaceTime calls were.
Switched the ID and it’s working fine!

Yeah, that is a known issue sometimes. Many people report success with the following:
Quit the Messages App by entering multitasking mode (double tap the Home button) and swipe up on the Messages app to remove it. Then restart the phone.

Try setting up another admin user account to see if the same problem continues. If Back-to-My Mac is selected in System Preferences, the Guest account will not work. The intent is to see if it is specific to one account or a system wide problem. This account can be deleted later.
If the problem is still there, try booting into the Safe Mode using your normal account. Disconnect all peripherals except those needed for the test. Shut down the computer and then power it back up after waiting 10 seconds. Immediately after hearing the startup chime, hold down the shift key and continue to hold it until the gray Apple icon and a progress bar appear. The boot up is significantly slower than normal. This will reset some caches, forces a directory check, and disables all startup and login items, among other things. When you reboot normally, the initial reboot may be slower than normal. If the system operates normally, there may be 3rd party applications which are causing a problem. Try deleting/disabling the third party applications after a restart by using the application un-installer or by using the developer’s uninstall instructions. For each disable/delete, you will need to restart if you don't do them all at once.
