I use WonderShare AllMyTube (http://www.applemacvideo.com/).

It works awesome. When you view a YouTube video you're presented with a tab in the top right corner of the video giving you a choice of download quality. Very cool.

Ok - You are using iCloud Photo Library on your Mac - are you using it on your iPhone? If you are then you can not "import" anything via USB - everything is transferred via ICPL

And You still have not told us what version of IOS you have on your iPhone but most likely you have IOS 11 which by default uses and new more compressed video format - if you are then you either need to change the photos to use the most compatible format for photos and video or you need to upgrade your Mac to High Sierra which supports the new formats - you are currently a couple of years behind on your Mac

iCloud Photo Library is a syncing service. Any photo you delete from a device where iCloud Photo Library is turned on will also be deleted from iCloud and from any other device connected to that iCloud Photo Library. You can potentially reduce the storage space required on a device by turning on Optimize Storage. See: iCloud Photo Library - Apple Support

Apple does not currently offer cloud-only storage for photos. If that is what you want or need, you may want to explore 3rd party options such as Google Photos or Dropbox.

Update:  I had apparently selected "optimize iPad storage" in the Photos app settings.  There it says hi-rez videos are kicked over to the cloud and a low-rez "optimized version" stays on the device.  This apparently happens only if I'm low on space:

IMG_3799.PNG

So now I know how to recall the full-res videos back to the iPad.  But shouldn't I have at least been able to watch the "optimized version" when I didn't have an internet connection?  If not, then what's the "optimized version" for?

Another thing: the iPad reports I've got 36 of 64 GB available storage space on the device.  Is 56% free space really considered "low on space"?

None of which is explained anywhere that I can find.

Let me guess Apple really REALLY hates its Users, particularly it hates its Users using Apple devices as if they had bought them for their own personal use!

This has seriously made me think about getting an Android Tablet. It is just another in a long chain of time wasting, stupid design and obstacles that are making me, a 35 year Apple User, seriously p!ssed off.

What on Earth is going on in Spaceship Self Obsessed, Cupertino CA?

Do you know why the relevant information is not imported in the first place?

It has been this way since I used Apple Software to import videos. we are not allowed to speculate in these forums.

But there is no EXIF standard for videos for the capture date like for photos. The manufacturers are handling the capture date of videos differently. It will depend on your camera model, how the correct capture time can be found.  For example, when I import a video from my Panasonic Lumix cameras, I will find a still frame photo with all exif tags for each video, and I can lift and stamp the capture date from this still frame, because Photos handles the date of the still frames correctly. Apple handles the date and time of videos taken with an Apple device correctly, because it manufactured those devices and rely on the way the EXIF tags are set there. But for other camera models it is a big task to keep the software current every camera make and model, just like for the RAW support.

from the “recently impor... Show all »

from the “recently imported” I pressed “ctrl” “x” so i cut and paste it onto the USB

That explains it, then. Copy/Cut and paste will just transfer the preview files, and they are not always the same as the full resolution original files.

Did you also delete the photos from your iPhone?

Since you already deleted the videos from Photos, you can only recover them, if Time Machine has been running, while the videos have been on your Mac. If you set up Time Machine, it makes hourly backups. Perhaps you have been lucky. Otherwise you would need to run data recovery software. But this kind of software is expensive.  Use only software with a trial version, that will show you what can be recovered, before you pay for it.
